Garbage Soup

This morning I was itching to get outside and move! I took a shot of wheat grass before heading out the door for 4 miles of mostly walking, a little running. After getting home and showering and doing some chores, it was closer to lunch than breakfast, so I made a turkey sandwich with spinach/watermelon juice:

After lunch, I worked a while before heading to a much needed hair appointment. I can’t believe I have gone a year without a hair cut!

I had to run a few errands on the way home. I was hungry and thankful for my crock pot garbage soup. I had cleaned the fridge out earlier and threw a bunch of leftovers in the crock pot to make a use it or lose it/ clean out the fridge/ garbage soup. This is what I saved from going in the garbage:

-turkey sausage

-corn

-carrots

-green, red, orange, and yellow peppers

-red onion

-tomato

Then I added a can of cannellini beans, a can of diced tomatoes, 2 cups of chicken broth, adobo seasoning, Italian seasoning, salt and pepper.

It turned out great!

Where Is My Breakfast?

I have a confession. I have been neglecting my breakfasts! I have had my daughter for 7 days in a row and she has been eating breakfasts fit for a queen, but mine have fallen by the wayside. I can too easily forget about myself when caring for others. I also have not been able to get a run in the past 7 days, so breakfast and a run are my priorities tomorrow morning.

This morning, I managed a banana before heading out to a meeting, I ran some errands and then had late lunch/early dinner at Bahama Breeze. I couldn’t resist the coconut shrimp:

Yesterday I had a shot of wheat grass juice in the morning, had a meeting at noon and a late lunch followed by a brownie. I am starting to see how my cycle affects all areas of my life, including my eating. I’m working on finding that balance. Dinner was turkey sausage, carrots, baked potato and salad:

Monday was yet another breakfast failure, but a super healthy lunch of beans, lentils, kale, broccoli and israeli couscous, and chili for dinner (leftover from frozen):

I need to do a better job of healthy meal planning for the rest of the week. I feel like I have a moment to breath and get my priorities back in order. Life is a constant pattern of growth and adjustment. What a journey!!!
