After a great night’s sleep (I was so exhausted from the fun weekend, I was asleep before 8:00), I felt amazing and ready to have an incredible Monday. I didn’t even care that it was gloomy and raining outside. I really needed to go to the grocery store, but I managed to scrape up a breakfast of toast with avocado and red pepper hummus, and a shot of wheatgrass (just what I needed after an indulgent weekend):
I got a lot done around the house and worked in my home office building my future. I’m lit up guys!!! I’m so excited for what the future holds and FINALLY found my confidence to attain it!!!! The rain cleared up and I was able to go for a 3 mile walk/run.
Then I had a quick lunch of frozen veggies and grains before heading to an appointment:
After my appointment, I made a stop at the grocery store. I did not have a weekly meal plan, but I stuck to the basics and looked for sales to inspire a few meals for the week.
I found Chilean Sea Bass at Publix. It is my favorite fish, but I have never made it myself. I wanted something different and special for date night in and to thank my guy for a wonderful weekend. It turned out great except for several failed attempts at a pan sauce. The fish was perfect on it’s own, with a salad, roasted brussels sprouts and butternut squash risotto:
I have a feeling this is going to be an EXTRAORDINARY week!!!!
