I am getting used to staying at home these days. Florida has been under a Stay at Home order since April 3 due to Covid 19/Coronavirus. Tomorrow, the state will start Phase 1 of re-opening. The past 30 days have had their ups and downs and I don’t think things will ever go completely back to normal, at least not for me, and I’m completely ok with that. I have learned to slow down a bit and focus on what is essential. I have gotten my priorities in order. I have initiated deep healing. I have faced my shadows and accepted the dark parts of me knowing that they are there and that doesn’t make me wrong or bad or faulted, it makes me normal and human. I can choose to focus on my light, and let it guide me as I enter a new phase of growth.
I am excited to get back in to the world. To go out to eat, and gather with friends. But I am also so grateful for this time. I have learned how to be content at home and cherish the simple things. My daughter has developed a love of Uno and I love it too!
I am grateful that I found my way back to this blog and recommitted myself to a healthy lifestyle.
Breakfast today was strawberries and black berries, over Greek yogurt and whole wheat berry cereal:
Lunch was a turkey burger and avocado, corn and tomato salad:
-One ear of fresh cooked corn
-1 T of diced red onion
-1 T chopped cilantro
-1 clove of finely chopped garlic
-Juice of one lime
-drizzle of olive oil
-salt and pepper
After lunch, I did Jillian Michaels 30 Day shred workout, laundry, cleaned and played.
Dinner was Turkey Taco Soup. I love to make these kinds of soups at the end of the week to use up things in the fridge.
-Leftover turkey taco meat
-Jar of salsa
-Can of corn
-Can of black beans
-Diced red onion
-Diced red and yellow peppers
-2 cups of chicken broth
-Teaspoon of chili powder
-Teaspoon of cumin
-1/2 teaspoon of coriander
-Salt and pepper
