It was a good day today. I stayed on track with healthy eating and exercised! My daughter and I did Jillian Michaels 30 day Shred day 1. I was so impressed with her, she did the whole thing with me!
For breakfast I had non-fat Greek yogurt topped with blueberries and mandarin oranges, flax seed oil and unsweetened wheat berry flake cereal:
After breakfast my girl and I made veggie quinoa chili. I have discovered that if I tell her I am making a You Tube video, she will do anything. So we made a pretend cooking video.
Veggie Quinoa Chili in the Crockpot:
Leftover tomato juice (I had about 2 cups)
1 Tablespoon tomato paste
2 cups chicken stock
1 cup quinoa
2 stalks of celery
half a red onion, diced
1 clove of garlic
Mini peppers, 2 each, red, yellow, and orange, diced
1 zucchini, diced
1 yellow squash, diced
1 can of black beans, drained and rinsed
1 tablespoon chili powder and paprika
1 teaspoon cumin
1/2 teaspoon salt, oregano and turmeric
A pinch of chili flakes and black pepper
Throw it all in a crockpot and cook until you think it’s done. (I had to add a little water half way through). I make a lot of soups and chilis like this. I just throw in any veggies, beans, a grain, tomato product, broth and seasonings.
For lunch, I enjoyed our creation with watermelon.
For dinner I made a few shrimp in pesto over leftover veggies of broccoli, lentils, spinach and beans and a salad.
And for dessert, another tiny piece of tiramisu:
I feel like my mindset has shifted back to a place of motivation and I thank God! I have been praying for this!
