Mom in Law :)

Only 2 weddings this weekend felt like vacation 🙂 Especially since we had Matt’s mom visiting. She came in town Wednesday night, and although I have been working a lot ever since, we have had some fun evenings and a great day Sunday visiting with my family.

Thursday night we went out to eat at Kona Grill.  We split the edamame, and I ordered the blackened swordfish, and a salad. The we stopped at Yogurtology for frozen yogurt. Fun night out!

Friday I had a wedding to set up.  I loved the natural feel of this wedding. The bride made the table numbers and supplied the cutest little animals to incorporate into the centerpiece. Each table was an animal name rather than a table number:

Friday night dinner was a laid back, relaxing, veggie filled dinner in. I made a veggie fajita salad with homemage guacamole and homemade salsa.

Saturday’s wedding was very pretty in purple and green.  The bride supplied many of the centerpiece containers, table numbers, birds, and card birdcage:

Saturday night, we went out to eat at Thai Terrace, a tiny little restaurant in tampa attached to the Howard Johnson Hotel that has great reviews on Yelp. I can understand why.  The food was excellent. we split the appetizer sampler with chicken satay, crab rangoons, spring rolls, and shrimp, and I ordered the red curry. Spicy and delish!

Back to Yogurtology for dessert:

Sunday we didn’t have a wedding. I was happy to have a day off to spend with my fiance, future mom in law, mom, sis, bro in law and niece and nephew. I started my day off early with 45 minutes in the gym and a 4 mile run. Then Matt and I took his mom to see the wedding venue and have a coffee:

After that, we went to my mom and sis’s house for a fun get together:

Evan couldn’t wait to get to those brownies. My pictures didn’t turn out of the yummy bbq chicken, burgers, corn on the cob, baked beans, and salad. And I’m sad I didn’t get any pics of my mom in law. She looked so cute playing tag with Evan and Grace!  Good times! I have the best family!!!!

A Dolphin Encounter

Saturday’s wedding was a big one, 188 guests, we had to add a tent on the back of the stable. The brown and green looks great with the wood of the stable and the lush green surroundings.

The gazebo turned out beautiful!!!

Saturday night I went on a date with my honey. We went to a vegan restaurant in Tampa called The Loving Hut. The building looks really shady, but the food was really tasty, I was pleasantly surprised. My vegan cheesesteak was so good, I ordered another to take to lunch the next day, Matt got the pad thai and we split some fries and something called the drumstick, which was an fried appetizer stuffed with mushroom and other yummy stuff:

Sunday night was fun. My boss gave us 2 tickets to the Blues Festival in St Pete. We listened to some great music, had some great food. We each had a taco from the Taco Bus, I had 2 delish ribs, and we split a gyro which went unpictured:

The highlight of the evening was our dolphin encounter by the water. It may be the coolest thing that has ever happened to me. We decided to go sit on the seawall and enjoy the sunset.

There was a dolphin sighting out in the distance. I had this crazy idea to try to call the dolphin over with my mind. I concentrated on the water below my feet and thought of sending my thoughts to the dolphin. I did not expect anything to happened, and I’m not even sure why I tried it, but within 30 seconds, I kid you not, that dolphin swam directly under our feet, on its side looking up at us with its big beautiful eye, turned around when it got right passed us and swam back under our feet looking at us, the swam away. It was surreal. We kept saying “did that really just happen?” It was incredible.

What an amazing weekend!
