They say you should eat foods of every color of the rainbow. Well, it’s a rainy day today, so to brighten it up and get some healthy nutrients, I made Rainbow Quesadillas.
Roy G Biv (minus the blue):
Red peppers, orange peppers, yellow peppers, corn, broccoli, and red onions. I started by carmelizing the onions:
Low heat for about 45 minutes (sprinkle just a pinch a sugar on towards the end to really caramelize those babies).
Add peppers, cook for a while longer.
Finally add broccoli and corn. (I used frozen, because that’s what I had on hand.)
Using your favorite whole grain tortillas:
Spread a little Trader Joes Roasted Red Pepper and Eggplant spread on one tortilla(or anything else that sounds appealing, like salsa, mango chutney, whatever).
Next add veggies:
Next a little chicken (or any other protein, beans, fish, tofu, it’s up to you).
Finally, a little cheese:
Top with another tortilla and put on the George Foreman Grill (or in a skillet and flip half way through).
Cut, garnish with lettuce and tomato and enjoy.
That looks delicious! I’m going to have to keep an eye out for that pepper spread.
