I love taking leftovers, mixing them with lots of fresh veggies and cooking it all up to make a masterpiece. The other night, I made turkey sloppy joes. And today, here’s what I created:
Potatoes, onions, green peppers, cabbage, kidney beans, chopped tomatoes, lots of spices, and salsa, served over brown rice. Vunderful.
I love having a pile of fresh fruits and veggies sitting on my counter, reminding me to eat healthy at every meal.
There is also a bunch more in the fridge.
I love having a job where I’m surrounded by people who are also up to healthy eating. And a boss who sprung for lunch today. Thanks Bonnie!
